Easy Impressive Homemade Lemon Bars

"It's like making weird scrambled eggs".....that are delicious, buttery, flaky, rich, creamy, sweet and sour, and so f***ing good! Literally, I impress myself when I make these (SO EASY)

Ingredients

  • Crust:


  • 1 cup butter, softened (1 stick salted/1 stick unsalted)
  • 1/2 cup white sugar
  • 1/2 cup white sugar
  • 2 cups all-purpose flour
  • 2 cups all-purpose flour



Lemon Filling:

  • 4 eggs
  • 1 1/2 cups white sugar
  • 1/4 cup all-purpose flour
  • 2 and 3/4 lemons, juiced

Directions

  1. Preheat oven to 350 degrees F (175 degrees Celsius).

  1. In a big enough bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. 

  2. Press into the bottom of an ungreased 9x13 inch pan (or 2 smaller pans if you're like me).

  1. Bake for 15 to 20 minutes in the preheated oven, or until firm and a pale-golden. 

  2. In another bowl, whisk together the 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.

  1. Bake for an additional 16-20 minutes in the preheated oven. The bars will firm up as they cool.

  2. Then cut into squares (or whatever shape you want) and devour!
